The Healthiest Pancakes in the World (with hot berry sauce)

I’ve been making simple flourless pancakes with oats, banana and eggs for the longest time then one day I saw a picture of some beautiful green pancakes and it inspired me to throw in a handful of baby spinach. It doesn’t affect the taste or texture, just adds great green nutrition. Serve with a super simple hot berry sauce.

COOKING TIME: 12 mins
INGREDIENTS:
1 large or 2 small ripe bananas, peeled
2 eggs
A handful (50g) baby spinach leaves
30g oats (about 4 tbsp)
100g frozen mixed berries
2 tsp maple syrup
METHOD:
Put 1 large or 2 small ripe bananas, peeled, 2 eggs, a handful (50g) baby spinach leaves and 30g oats in a blender or food processor and blend until really smooth (around a minute).
Heat a large non-stick pan, if it’s a good one you won’t need any cooking oil or add just a drop of oil to the pan if required.
When the pan reaches a medium heat, pour palm-sized pancakes into the pan. Don’t make them too big as they will be hard to flip.
Cook for a minute or two until starting to brown underneath, then gently flip over using a spatula and cook for a minute or so on the other side. This can be a bit tricky so go slow, if they mess up a bit don’t worry, they’ll still taste great!
To make the hot berry sauce, Place 100g frozen mixed berries and 2 tsp maple syrup in a heat proof bowl. Microwave for 1-2 minutes until piping hot and give it a good mix.
Serve the pancakes drizzled with the hot berry sauce, and I also like a blob of Greek yoghurt.
